柚子胡椒塩ラーメン (Yuzu Pepper Ramen)

A few days ago, my friend gave me a recipe for special ramen soup, which she intended to make after getting ramen noodles (from me), I made it today BEFORE her 😏

The key ingredient is ' 柚子胡椒 - yuzu kosho' , unfortunately it can only be purchased at Japanese grocery shop or asian grocery shops with large variety of Japanese foods in Perth.

[ 柚子胡椒 - Yuzu Kosho ]

a spicy, hot Japanese condiment made from yuzu rind, chilli and salt.

Originated in Kyushu (south of Japan), and spread out all over Japan, now we can buy it anywhere in Japan.

Q: What can it be used for ?

A: Just treat it as unique substitute for wasabi and lemon (it has a pinch of pepper/salt flavour).

It can be used for sashimi dipping, condiment for chicken/beef steak, dressing, cold noodle dipping sauce, pasta sauce etc etc......

[ Ingredients for One, mix them all with 350ml boiling water ]

1 Tbsp chicken stock

1/2 Tsp salt

1/2 Tsp yuzu kosho

1/2 Tsp sesame oil

1/2 Tsp roasted sesame

1/2 Tsp grated garlic

Tips: Chinese chicken stock recommended, I like '李錦記LEE KUM KEE' brand

This is quite salty soup, maybe start with 1/4 Tsp salt, add another 1/4 if preferred, I like pink salt...

fresh garlic recommended

Just add cooked ramen noodle and toppings,  Done!
